Classic Gazpacho

Ingredients:

  • 3 lbs. ripe tomatoes, cored and coarsely chopped
  • 1 cucumber, peeled and seeded, coarsely chopped
  • 1 clove garlic
  • 1 red bell pepper, coarsely chopped
  • 1 jalapeno, seeded and coarsely chopped
  • 1/4 cup sherry vinegar
  • 1/3 cup extra virgin olive oil
  • Salt and freshly ground pepper

Directions:

  • Combine all ingredients in a blender and puree until smooth. Season with salt and pepper. Chill before serving.
  • Garnish with cherry tomatoes and chopped chives.
